“Too much good stuff” should be the theme of today’s Bites, even thought I managed to narrow my list down from last week’s massive post. Food bloggers are clearly back in action after the New Year’s celebration and it looks like we have a good 2008 to look forward to – recipe-wise, at the very least.

  • Food Beam has a great post up that guides you through the process of Mastering Focaccia, step by step. Complete with pictures, you should be able to turn out a perfect focaccia after reading through it, even if you’ve had difficulty working with yeast in the past.
  • The Roasted Vegetable Lasagna at Two Fat Als is a good meat-free alternative to the Meat Lasagna I posted about the other day. It is packed with zucchini, mushrooms, onion, eggplant and uses whole wheat pasta – definitely a healthy way to start the new year.
  • On perhaps a slightly less healthy note, we have Ice Cream Ireland‘s Chocolate Ganache Cake. The uber-rich chocolate dessert is made of of three ingredients – dark chocolate, cream and butter – with a bit of vanilla and cognac thrown in for flavor.
  • Vanilla Garlic often seems to specialize in cupcakes, so it caught my eye when I saw the recipe for an old family favorite cookie recipe – Grandma Capune’s Banana Cookies – posted. Bananas are a tasty, but underutilized, cookie ingredient and the banana-pecan combo in Grandma’s sounds just right.
  • The term “mega scone” has just been coined by 101 Cookbooks. It refers to a giant pastry made out of scone dough that,. Unlike regular scones that are sliced into individual servings before baking, giant pastries like Rasberry Mega Scones are baked as a long and single portions are sliced off after it comes out of the oven. This batch is filled with jam and the method for making them makes the scones easier to fill.
  • Fleur de Sel Caramel is one of my addictions, so I couldn’t resist mentioning that Confessions of a Foodie Bride made up a fresh batch at home. It took three tries to get it just right, but the tiny sweet-salty candies couldn’t look any more tempting unless they were on a plate in front of me right now.
  • Impressive is almost an understatement when it comes to describing Tartelette’s Chocolate Espresso Trio. The dessert set, inspired by the idea of a coffee break, includes Eclairs with Dark Chocolate-Espresso Mousse, Espresso-Dark Chocolate Pots de Creme and Frozen Mascarpone-Espresso Parfait on Deep Dark Chocolate Cake. The elegant pastries are a bit on the fancy side, but if you take them one by one, each would make a standout dessert at any party or gathering – especially if chocolate and coffee lovers are involved.
