In a bout of shamless self promotion, check out my article on Saucy today. The Reluctant Vegan is the name of the series I’m going to be working on. I’d explain the concept here, too, but the article itself is an introduction. The photo above is for the Apple Pistachio Spice cake I give the recipe for. I just love this cake – I think that the cardamom really makes it work.

June 27, 2005Nic – congratulations! Sounds like a really interesting topic. Are you just doing baked goods? If not, I’d be curious about using soy milk in frozen desserts. Also, I remember reading somewhere (probably on the package) that you could substitute ground flax seed (and water, I think) for an egg in baked goods. I’ve never tried it, but I wonder how that works. I’m sure it would only provide fat and moisture, not leavening.

Cathy – I’m not only going to do baked things. I want to try a variety of things that get an important part of their makeup from eggs and/or dairy in addition to doing things that are just plain tasty (I make a good vegan carrot cake, too). I haven’t personally used flax as an egg replacer, but it does have a distinctive taste, so I would think that it would do best in a recipe where you could disguise its presence.
