The Reluctant Vegan

In a bout of shamless self promotion, check out my article on Saucy today. The Reluctant Vegan is the name of the series I’m going to be working on. I’d explain the concept here, too, but the article itself is an introduction. The photo above is for the Apple Pistachio Spice cake I give the recipe for. I just love this cake – I think that the cardamom really makes it work.
Let me know what you all think. And suggestions for future topics are welcome.

  1. I can say.. “I knew you way back..” when you have your own tv show

  2. Well Nic, the cake looks scrumptious and I for one would like to try it. I have bookmarked the site of your column and look forward to future articles.

  3. Templar – Thanks. Maybe I’ll go for “The Next Food Network Star” in a few seasons. =)

    Ana – Thank you!

  4. great idea

my friend is a vegan and i usually resort to mking her some form of chocolate cake….. but know I will be able to give her some variety!

  5. Nic – congratulations! Sounds like a really interesting topic. Are you just doing baked goods? If not, I’d be curious about using soy milk in frozen desserts. Also, I remember reading somewhere (probably on the package) that you could substitute ground flax seed (and water, I think) for an egg in baked goods. I’ve never tried it, but I wonder how that works. I’m sure it would only provide fat and moisture, not leavening.

  6. Clare – Oh, I’m glad you can use the recipe!

Cathy – I’m not only going to do baked things. I want to try a variety of things that get an important part of their makeup from eggs and/or dairy in addition to doing things that are just plain tasty (I make a good vegan carrot cake, too). I haven’t personally used flax as an egg replacer, but it does have a distinctive taste, so I would think that it would do best in a recipe where you could disguise its presence.

  7. Clare, I’ve been adoring (lurking :p) your blog for a while and I am thrilled about your project. I belong to which has a decent number of vegan tried-and-true recipes. Also, Kreeli of the is the best vegan cook on earth, check the site out!

  8. Vegimouse – I’ll check out her site, thanks. I hope you enjoy the future articles as well!

  9. Congrats!!!! I’ve got Saucy in my list of favorites, so I’ll be looking for your next article! Bravo.
